We all have an autoimmune flare every once in awhile..
And yet we still have to feed the kids and maybe we even need some comfort food.
I remember messaging my twin like 10 years ago and telling her I was so tired and needed to make chili. I just wanted to make some comfort food, and to me there’s nothing more comforting than a bowl of chili beans.
Turns out, it’s super easy.
My way isn’t fancy and can be executed cheaper- like if you decide to soak your beans and make them from scratch, but this works for people who aren’t avoiding nightshades and need a quick dinner.
roughly put and this recipe is very forgiving.
4 cans of beans (15oz) -I like to use 2 cans of kidney in chili sauce, a can of kidney and a can of black. Sometimes I even get wild and use a 5th can of beans.
1.5 can of crushed tomatoes (each are 28 oz, use all purpose not Italian crushed )
onion 🧅 white- diced 1/4
1.5 packet of chili seasoning (I use McCormick Original)
1/2- 1 full chopped bell pepper
2lbs Hamburger, cooked and browned and drained
optional- you can add anything you want but I like to add a tiny can of chopped peppers and tomatoes though I didn’t have any on hand this time.
all of this into a pot and cook on medium to the temp you want.
Fast and super easy dinner to cook for when you are tired and hurting and it warms up really well all week long, so there’s a lot of leftovers.
I top mine with sour cream and cheese 🧀 because I’m extra.
Theres a lot of baggage that comes with being chronically ill, and one of the things I’m trying to be better at is saying no to take out and making easy things that can help feed me all week. I hope you will follow along with me.
