So, many of you all know I have been on a gluten free journey because I have been reduced to the fact that I’m celiac. This change was absolutely paramount in becoming a more energetic and healthy version of myself and removing gluten has literally changed my life. (And it’s only been like. A month and a half maybe)
I have been existing off of salads and steaks and potato’s and Jamba Juice and my sweet life partner has been squeezing me fresh squeezed orange juice from our trees here at our home.
Before I was really really sick, I used to love to cook.
That was over a decade ago.
Yesterday, Brandon briefly stated I should do something with the potatoes that were about to go bad on the counter and the ham I had asked for in the fridge.
I realized, I’m feeling better. Why not try to cook? So here we are. Yesterday, I made an amazing scalloped potatoes and ham.
Today, an apple crisp. And both are gluten free.
Almond flour has become my best friend.
Here are the details for the Apple crisp
Gluten Free Apple Crisp
- Preheat oven to 350 degrees F (175 degree C).(I used a Ninja Foodi )
- Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.(I dumped straight into the bowl of the Foodi)
- Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
- Bake at 350 degrees F (175 degrees C) for about 45 minutes. ( I would do 38 minutes in the Foodi)
